Ingredients:
- 400 g Ricotta Cheese (well drained and dry)
- 125 g soft Butter
- 100 g Sugar
- ½ tsp Vanilla Essence
- ½ tsp Salt
- 3 Eggs (beaten)
- 2 tbsp Semolina
- Juice and zest of 1 Lemon
- ½ tsp Cinnamon
Cooking Instructions:
- Combine butter, sugar, and eggs together in a large bowl. Beat until sugar has melted and you get a fluffy mixture.
- Add salt, vanilla, and cheese. Mix well.
- Add semolina, lemon juice, and cinnamon. Stir to integrate all the ingredients.
- Pour the mixture a in buttered baking pot and pour a thin layer of water on top.
- Bake at 200 degrees C for 35 minutes.
- Cool to room temperature and garnish with lemon zest.
- Serve.
