Ingredients:
- 2 cups Rice
- 3 Cardamoms
- 3 Cloves
- 1 inch stick of Cinnamon
- 1 tsp Pepper
- 2 Green Chilies (chopped)
- 3 Garlic Cloves (chopped)
- 1 cm Ginger (chopped)
- 3 tbsp Ghee
- 1 Bay Leaf
- 1 Carrot (sliced)
- 1 Onion (sliced)
- 2 cups Coconut Milk
- Salt (to taste)
- 2 tbsp Oil
- Few Cashewnuts
- Few Raisins
Cooking Instructions:
- Grind cardamom, cloves, cinnamon, and pepper into a fine powder.
- Mix green chilies, garlic, and ginger with little water to make a nice paste.
- Heat ghee in a pan and fry bay leaf, carrot, and half of the onion for 3 minutes.
- Stir in ginger-garlic paste and cook for 2 minutes.
- Put grounded spices and mix well.
- Add rice and cook for another 2 minutes.
- Stir in coconut milk, water, and salt. Cover and cook until the rice is well cooked.
- Heat oil in a pan and deep fry the remaining onion.
- Put in cashew nuts and raisins. Fry for a minute.
- Garnish over the rice.
- Serve hot.
