Ingredients:
- 3 cups cooked Turkey (shredded)
- 2 cups Sour Cream
- 2 cups Cheddar Cheese (shredded)
- 1 tsp Salt
- 12 (10-inch) Corn Tortillas
- 1/3 cup Corn Oil
For the Sauce:
- 2 cans (4 oz each) chopped mild green Peppers
- 1 clove Garlic (minced)
- 2 tbsp Olive Oil
- 2 cups Onion (chopped)
- 1 tsp Salt
- ½ tsp Oregano
Cooking Instructions:
- Combine sour cream, Cheddar cheese, and salt in a large mixing bowl.
- Add turkey and toss to coat properly.
- Heat corn oil in a large pot and fry the tortillas until soft.
- Drain and stuff with the turkey mixture. Seal properly.
- Place the stuffed tortillas side-by-side in a shallow baking pan, keeping the sealed sides down.
- Heat olive oil in a pan.
- Add peppers and garlic. Saute.
- Add onions, salt, and oregano, along with some water to make a sauce base. Cook on low heat until the sauce thickens.
- Pour over the stuffed tortillas and bake at 350 degrees F for 30 minutes.
- Remove and leave aside for 4-5 minutes. Serve warm.
