Ingredients:
- 2 cups Maida
- 2 tsp Baking Soda
- 1½ tsp Salt
- 2 tsp Cinnamon
- 3 Eggs
- ½ cup Vegetable Oil
- 1 1/3 cups Sugar
- 1 tsp Vanilla Essence
- ½ cup golden Raisins
- ½ cup Cashews (chopped)
- 2 cups Mangoes (diced)
- ¼ cup flaked Coconut
Cooking Instructions:
- Preheat oven to 350 °F.
- Butter a square baking pan.
- Sift maida, baking soda, salt, and cinnamon in a large bowl.
- Make a well in the center and pour in eggs, vegetable oil, sugar, vanilla essence, raisins, cashews, mangoes, and coconut.
- Beat thoroughly until you get a smooth batter. Avoid over-mixing.
- Pour the batter into the prepared pan and leave aside for 20 minutes.
- Bake for 1 hour, until a toothpick inserted comes out clean.
- Remove and serve warm or refrigerate.
