Ingredients:
- 15 raw jumbo Shrimps
- 1 tbsp Peanut Oil
- 6 Garlic Cloves (minced)
- 1 Carrot (coarsely grated)
- 2 Eggs
- 200 g Rice Noodles
- 2 tsp Ketchup
- 1 tbsp Brown Sugar
- 2 tbsp Oyster Sauce
- 2 tsp Fish Sauce
- 3 tbsp Lemon Juice
- 3 tbsp Water
- 1 tsp dried Chili Flakes
- 2 tbsp Peanuts
- 2 Spring Onions
- ¼ cup fresh Bean Sprouts
Cooking Instructions:
- Place the noodles in hot boiling water for about 2-3 minutes, until tender. Add some cold water and drain properly.
- Combine ketchup, brown sugar, oyster sauce, fish sauce, lemon juice, water, and chili flakes in a small bowl. Set aside.
- Heat peanut oil in a large frying pan, and fry shrimps, carrots, and garlic until the shrimps turn pink and opaque.
- Transfer the mixture on the side and make a well in the middle. Break eggs and stir fry until cooked.
- Add noodles and stir gently.
- Add sauce mixture and peanuts. Mix well.
- Remove the pan from heat, and add on spring onions and bean sprouts. Serve hot.
