Ingredients:
- 1 kg Lamb Pieces (cooked)
- 2 medium Onions (chopped)
- 3 Garlic Cloves (minced)
- Salt to taste
- 1 tsp Ginger
- 1 tsp Pepper
- ½ tsp Saffron (crumbled)
- ¼ tsp Moroccan Yellow Colorant
- 1 Cinnamon Stick
- ¼ cup Olive Oil
- ¼ cup Butter
- Small handful of Cilantro Bouquet
- 1 cup Dried Apricots
- 3tbsp Sugar
- 1 tsp Cinnamon
- Handful of fried Almonds
- 2 tsp Sesame Seeds
Cooking Instructions:
- Take lamb with onion, garlic, spices, oil, butter in a pan and cook it on medium flame until it is brown on all sides.
- Pour into 2½ cup water with cilantro and get it to boil. Then cook it covered on medium flame until meat is tender and gravy is condensed.
- Take out ½ cup meat stock and keep it to the side.
- Put apricots with water in a pan and cook it covered on medium flame for 10-15 min. Strain the apricots and mix with sugar, meat stock and boil until it thickens.
- Pour it over cooked lamb and top up with almonds.
