Ingredients:
- 2 cup Red Beans (soak overnight)
- 2 tbsp Vegetable Oil
- 1 cup chopped Onions
- 1 Bell Pepper
- 1 cup hot Salsa
- 3 tbsp Tomato Sauce
- 1 tbsp Chili Seasoning
Cooking Instructions:
- Cook beans in plenty of salted water until tender but firm. Drain properly.
- Heat the oil in a frying pan over medium heat.
- Stir-fry the pepper and onion until golden.
- Add the beans and cook over high for 7-8 minutes, stirring frequently.
- Add salsa and tomato sauce and cook on low for 2-3 minutes.
- Sprinkle with chili seasoning and remove from the heat. Serve hot with rice.
