Ingredients:
- 1 cup grated Apple
- 1 cup grated Carrot
- 1 cup All-Purpose Flour
- ½ cup Oatmeal
- 1 tsp Baking Soda
- ½ tsp Baking Powder
- 1 tsp Cinnamon Powder
- ¾ cup Brown Sugar
- 4 tbsp Dry Fruits
- 1 tbsp Raisins
- 1 cup Milk
- 1 tsp Vanilla Essence
- 1 Egg
- ¼ cup Butter (melted)
- 1 tbsp Oil
Cooking Instructions:
- Mix together flour, oatmeal, baking soda, baking powder and cinnamon in a bowl.
- Take another bowl and whisk egg together with sugar, milk and oil, until uniformly combined.
- Add apple, carrot, dry fruits, raisins and vanilla essence in the flour mixture and mix well.
- Blend in the egg mixture. Whip until soften.
- Butter 8 muffin cups and transfer the mixture into them until ¾ full.
- Bake in a preheated oven at 350 degrees F for 15-20 minutes, until a toothpick inserted into the center comes out clean.
