Ingredients:
- 1 large meaty Lamb Shank
- ¼ cup Seasoned Flour
- 2 tbsp Oil
- 6 Dried Apricots
- 6 Dried Plums
- 2 small Turnips (quartered)
- 4 Red Potatoes (quartered)
- 2 Carrots (sliced)
- 1 Onion (sliced)
- 2 cups Beef Stock
- 1 cup Red Wine
- 1 Cinnamon Stick
- 1 tbsp Cumin Seed
- 1 Orange (zest & juice)
- ¼ cup mixed Black & Green Olives
Cooking Instructions:
- Preheat the oven to 300°F.
- Sprinkle seasoned flour over the lamb shank.
- Heat oil in a pan and fry the lamb until brown.
- Stir in the remaining ingredients except olives and get it to a boil.
- Braise it covered in the preheated oven for 2-2 ½ hours.
- Add on olives and serve hot.
