Ingredients:
- 2 cups Onion (diced)
- 2 tbsp Ginger (grated)
- 3 cloves Garlic (minced)
- 1 cup Red Lentils (washed)
- 1 tsp Cumin (Jeera)
- 1 tsp Coriander (Dhania)(ground)
- 1 can Tomatoes (diced)
- 4 cups Chicken Stock
- ½ cup Yogurt (Curd)
- Little Cilantro (chopped)
- Salt to taste
- Pepper to taste
For The Spiced Oil:
- 4 tbsp Oil
- 1 Habanero Chili
- ½ tsp Turmeric
- ½ tsp Cumin
Cooking Instructions:
- Heat oil in a pan and fry the onion until it is transparent.
- Put in ginger and garlic and saute it for 2-3 minutes.
- Mix in cumin with coriander. Pour in tomatoes, chicken stock, and lentils and cook it covered for 15-20 minutes. Flavor it with salt & pepper to taste.
- Heat oil in a pan to make spiced oil.
- Add habanero, turmeric and cumin, stir for a minute and take it off heat.
- Serve the soup hot with yogurt in the center and top up with little spiced oil & parsley.
