Eggplant Potato Curry

Ingredients:
- 2 long & thin Eggplants (sliced)
- 2 Potatoes (peeled & cubed)
- 3 Tomatoes (chopped)
- Salt to Taste
- 1 tsp Red Chilly Powder
- 1 tsp Coriander Powder
- ½ tsp Garam Masala
- A pinch of Turmeric Powder
- 3 tbsp Oil
- 3 cups Water
- ½ tsp Sugar
- 2 tsp Coriander Leaves
Cooking Instructions:
- Heat oil in a frying pan on medium flame.
- Add tomatoes with salt and turmeric powder and cook for 4-5 minutes.
- Stir in potatoes, eggplant, all spices, sugar, and water and cook it covered, until vegetables are tender.
- Remove from the heat and top with coriander leaves.
- Serve it hot with rice.
