Ingredients:
- 1 Brinjal (Chinese Eggplant) (chopped, 2 inch long)
- 250gm Curd (Yogurt)
- 2 Green Chilies
- Mustard
- Fenugreek
- Kalajeera
- Curry Leaves
- Cumin
- Fennel Seed
- Ginger
- 1 tsp sugar
- Salt (to taste)
- 2 Green Chilies
- Turmeric
- Oil
Cooking Instructions:
- Add turmeric and salt to the brinjal.
- Take that brinjal and deep fry it.
- On the other side, mix yogurt with salt, sugar and little water.
- Mix all the above ingredients with fried brinjal.
- Fry mustard, fenugreek, cumin, kalajeera, and fennel seed and let it splutter.
- Add ginger and green chilies to them and then add curry leaves.
- Mix these in the yogurt brinjal.
Suggestions:
- Serve with hot rice/ roti
