Ingredients:
- For the Cupcakes:
- 3 cups Flour
- 1 cup Butter (unsalted) (softened)
- 1 tbsp Baking Powder
- 2 cups Sugar (granulated)
- 4 Eggs
- 3 Limes (zested and juiced)
- 1/2 tsp Vanilla
- 1 cup Buttermilk (or 1 cup milk + 1tsp lemon juice)
- 1/2 cup Tequila
- 1/2 tsp Salt
- 1/4 cup Triple Sec
For The Tequila-Lime Butter Cream:
- 2 cups Sugar (granulated)
- 8 Egg Whites
- 3 sticks Butter (softened)
- 2-1/2 tbsp Lime Juice
- 2 Tbsp Tequila
Cooking Instructions:
- Preheat oven to 325 degrees.
- Line 24 muffin tins with paper liners.
- Take a bowl sieve flour, baking powder and salt well.
- In an electrical mixer mix butter and sugar together until it is fluffy.
- Into that add one egg at a time beating well. Mix in lime.
- Slowly add flour in batches into the mixer adding buttermilk alternately along with the flour.
- Mix it well.
- Fill each muffin cup with 3/4 full and bake it for 25 minutes until the cake turns brown in color.
- In a small bowl add tequila and Triple Sec.
- Brush each cupcake with the liquor mix. Keep the cupcakes aside.
- For the frosting, place the electric mixer over simmering water and whisk sugar and egg whites together until sugar is completely dissolved.
- Again whisk the whole mixture for about 10 minutes until it makes stiff, glossy peaks.
- In a medium speed, beat butter into the mixture1 tablespoon at a time.
- Once whole of the butter is added into the mixture, add lime juice and tequila and blend it until the frosting becomes smooth and fluffy.
- Pipe the frosting onto the cup cakes and garnish it.
