Vaghaar Kadhi

Ingredients:
- 2 Potatoes
- 20 Cluster beans
- 1 Yam (sliced)
- 4 Lady Fingers
- 2 Brinjals
- 1 Lotus stem
- 1 Carrot
- 2 Cups gram flour
- 1 tsp Cumin seeds
- 1 tsp Fenugreek seeds
- 1 tsp Ginger (grated)
- 5 green chillies
- 2 tbsp Coriander (chopped)
- 1 tsp Cinnamon clove powder
- 1/4 Cup tamarind water
- 1/2 tsp Turmeric powder
- 1 tsp Sugar
- 6 Cups hot water
- Oil for frying
Cooking Instructions:
- Wash and peel all the vegetables.
- Chop them into chunks.
- Heat the oil.
- Fry brinjals and lady finger one by one till crisp.
- Keep them aside.
- Now add cumin and fenugreek seeds.
- Mix flour and stir till light brown.
- Add green chillies, curry leaves and chopped vegetables.
- Stir well.
- Pour hot water and stir till boiled.
- Mix turmeric, sugar and salt to tamarind.
- Add this to the kadhi.
- Cook over medium heat till vegetables are cooked.
- Now add fried brinjals and lady fingers.
- Sprinkle chopped coriander.
- Vaghaar Kadhi is ready.
