Pickled Octopus

Ingredients:
- 1 kg Baby octopus
- 2 Red capsicums (diced)
- 1/2 Cup lime juice
- 3 Cups canola oil
- 1/2 Cup red wine vinegar
- 10 Basil leaves
- 1 tbsp Oregano
- 2 tbsp Garlic (crushed)
- 1/2 Cup reserve juice
- 1 Red chilli
- Salt to taste
Cooking Instructions:
- Place baby octopus, 1 cup canola oil, salt and 1 tbsp crushed garlic in baking tray.
- Toss till octopus is coated.
- Cover it in a foil.
- Bake at 180 degrees for 15 minutes and then remove foil.
- Strain octopus and reserve juice.
- Allow octopus and juice to cool.
- Now mix diced capsicums, oregano, 1 tbsp crushed garlic, basil leaves, red wine vinegar, lime juice and canola oil.
- Toss it properly.
- Cool it overnight.
- Pickled Octopus is ready.
