Oyster Croquette

Ingredients:
- 2 Cups oysters
- 2 Cups cooked veal
- 4 tbsp Butter
- 5 tbsp Cracker crumbs
- 4 Egg yolks
- 2 tbsp Onion juice
Cooking Instructions:
- Clean the oysters and drain them.
- Blanch and strain the liquor.
- Chop the oysters.
- Soak the crackers in liquor.
- Mix all the ingredients.
- Take small portions from the mixture.
- Dip these portions in egg.
- Roll in crumbs.
- Heat the butter and fry the rolls.
- Oyster Croquette is ready.
