Beetroot Pachadi

Ingredients:
- 2 Cups grated beetroot
- 1-1/2 tsp Grated ginger
- 1 Finely chopped onion
- 3/4 tsp Mustard seeds
- 1 Sprig curry leaves
- 2 Green chillies, split
- 2 Cups curd
- 1-2 tbsp Oil
- Salt to taste
Cooking Instructions:
- Heat oil in a pan over medium heat.
- Fry the mustard seeds.
- Add onion and fry until it turns brown.
- Mix green chillies and keep stirring.
- Add the grated beetroot, curry leaves, ginger, and salt to taste.
- Simmer it until the beetroot is cooked properly.
- Add curd to the mixture when cool.
- Beetroot Pachadi is ready.
Suggestions:
- Use a mixture of buttermilk and curd if you prefer the pachadi to have a thin consistency.
